SUGGESTED APPLICATION
White Bread and Rolls:
Use at least 2% or 1 kg of Sobake to q 50kg of wheat flour. However, it will take additional 1 .51trs of water to the existing quantity of water usage. It forms hydroperoxides from linoleic acid in shortening. This reacts with gluten, increasing its strength and the volume of the bakéd bread. As mentioned earlier, presence of SOBAKE increases absorption by adding 1.5-2.0kg of water per 1 .0kg of soy flour, and improves crumb body, resilience énd crust colour.
- Doughnuts:
Add 4-10% SOBAKE (soy flour) which wii,l improve water retention (and decreases fat absorption) during frying. Add 2 — 5kg of SOBAKE to 50kg of wheat flour.
- Pastries:
Add 4 — 10% and this will improve machining, freshness and yield i.e. 2kg to 5kg of SOBAKE in 50kg of wheat flour. Add water as desired but not more than the weight of SOBAKE.

Sobake is made from soy flour with 3% fat and about 48-52% protein, which can be used by bakeries and confectionery shops. It is added to wheat Flour to increase yield.
Sobake has a very high protein content and it extends the product shelf life of your baked products.
